Grilled Corn on the Cob with Truffle ButterPrint This
- 4 fresh cobs of corn, with loosely attached husks
- 1/4 C. excellent quality butter
- 1 tsp. truffle oil, or 2 tsp. truffle paste
Preparation: Bring butter to room temperature and use a small food processor to blend the butter with the truffle oil or paste. Do not over blend. Pack the butter in the shape of a log so that it is completely encased in wax paper and refrigerate for up to 60 days.
Once your BBQ is fully going, peel the corn husks back but ensure they remain attached. Remove the silky threads and wrap the corn in the husks again. Grill the corn for about 10 minutes, turning every few minutes or until the corn is golden/caramelized and the aroma beckons you to start eating. Spread the butter on the corn with salt to taste.
